보라돌이(마키베리 가지롤)
재료
가지 1개, 적양파⅓개, 망고 1개
냉동새우 10마리 달걀흰자1개 + 녹말2큰술,
새우 묻힐 녹말가루, 튀김 기름, 거품기2개, 유리볼
소스 : 마키베리 1작은술, 마요네즈 2큰술, 설탕2큰술, 물1큰술,
녹말가루 1작은술, 소금 2꼬집, 우유⅔컵, 레몬즙 1큰술
만드는법
1 가지는 필러로 얇게 썰어 소금을 약간 뿌려 밑간한다.
2 적양파는 채 썰고 망고도 껍질을 벗겨 나무젓가락 두께로 채 썬다.
3 새우는 10분간 소금 물에 담가 해동 시킨다.
4 볼에 달걀흰자를 넣고 거품기로 거품을 낸 다음 녹말가루를 넣어 섞어준다.
5 새우에 녹말가루를 묻혀 튀김기름에 튀겨낸다.
6 마키베리크림소스를 만든다
냄비에 마키베리, 마요네즈, 설탕, 물,녹말가루, 소금을 넣어 저어준 다음 우유를 넣어 저어주고 불에 올려 중불로 끓이면 걸죽하게 농도가 나면 불에서 내려 레몬즙을 넣고 저어주면 완성.
7 절인 가지의 물기를 닦고 펼친다음 튀긴 새우, 적양파,망고를 올리고 돌돌 말아준다.
8 접시에 가지 롤을 올리고 마키베리크림소스를 뿌려 낸다.
