검은콩카레
[재료]
고구마(모양이 곧고 굵지가 너무 굵지 않은 작은 것) 500g, 닭다리살 200g
[밑간] 식용유 1T, 카레가루 1T, 소금, 후추 약간씩
파인애플(생 것) 30g, 검은콩 삶은 것 1/2컵
A: 양파(얇게 썬 것) 1/3개, 마늘 4톨, 카레가루 1T, 밀가루 2t, 백포도주 80ml 건포도 20g, 생강 간 것 1/2작은술, 물 2 1/2C, 레몬즙 1큰술, 카이엔 페퍼 약간, 버터, 식용유 적당량씩
[과정]
1. 고구마는 깨끗이 씻어 껍질째 2cm 두께로 둥글게 잘라 준다. 닭다리는 껍질을 제거하고 먹기 좋은 크기로 자른다. 볼에 넣고 밑간 재료를 넣어 버무려둔다. 파인애플은 2cm 각으로 썬다.
2. 냄비에 버터(1t)을 넣어 녹인 다음 1의 닭다리살은 굽는다.
3. 다른 프라이팬에 버터와 식용유를 넣어 녹이고 약불에서 중불로 가며 양파, 마늘을 넣어 볶는다. 양파가 색이 변하면 카레가루, 밀가루를 넣는다. 전체를 잘 섞으며 볶는다.
2의 냄비로 옮겨 넣는다.
4. 2에 흰 포도주를 넣고 불을 켠다. 강불에서 알콜을 날린다.
5. 썰어 둔 고구마, 파인애플, 건포도, 닭다리살, 생강을 넣어 거품을 걷어내며 가볍게
조려 준다. 뚜껑 덮고 약불에서 40분간 조린다.
6. 맛간장과 후추, 레몬즙, 소금, 카이엔페퍼를 넣어 마무리한다.
7. 그릇에 담아낸다. (밥은 따로 낸다.)

1. Sweet potatoes are cleaned and cut into 2cm thick rounded skin. Remove the chicken skin and cut it to a good size. Put it in the bowl and put the ingredients in the bottom. Cut the pineapple into 2cm squares.
2. Put butter (1t) in a pan and dissolve it, then bake 1 chicken leg.
3. Put butter and edible oil in other frying pan and melt. Fill with onion and garlic. When the onion color changes, put curry powder and flour. Mix thoroughly and fry.
